Tostadas de Huitlacoche y Setas

Crisping day-old tortillas on a comal while sautéing huitlacoche.

Setas are a local mushroom that have a flavor and texture surprisingly similar to chicken. These are simply seared with salt and pepper.

Huitlacoche and Setas are abundant and delicious in the late rain-season.
